Veggie Stir Fry


Quick 10 Minute Veggie Stir Fry


Parsley 2 Tsp.

Salt 1 Tsp.

Ground Black Pepper 1 Tsp.

2 Eggs

Pure Vegetable Oil 1 Tb.

1 Bag of Frozen Vegetable Stir Fry W/ Rice (Includes Mushrooms, Red Peppers, Broccoli, Celery, Onion and Rice

*Soy Sauce 1 Tb.






Heat  pure vegetable oil in a large skillet or wok on medium heat


Add frozen veggie stir fry mix  with rice to the heated pan


Let it cook down before you start adding your seasonings to the stir fry


I added 1 Tb of soy sauce to my veggie stir fry (optional)


I also cooked 2 eggs and added my parsley, pepper and salt and scrambled them in a small skillet


Scramble the eggs in with the veggie stir fry mix 


Add more parsley to garnish and voila!

My Weight Loss Journey & Yacon Syrup Glazed Chicken





I have always been on the search for healthy recipes to try along my weight loss journey and came upon this recipe from Dr. Oz’s website. Grilled, baked, and sauteed chicken breasts is my favorite go to meal when I’m trying to complete a healthy meal. I decided on the Yacon Syrup Glazed Chicken and it turned out so delicious! I changed the recipe to accommodate what I had in my pantry and it tasted great! If you love honey glazed meat, this dish is for you, but first let’s start with some facts on Yacon Syrup.


What is Yacon Syrup?

Yacón syrup is a sweetening agent extracted from the tuberous roots of the yacón plant (Smallanthus sonchifolius) indigenous to the Andes mountains.

My (version of the) Recipe for Yacon Syrup Glazed Chicken :

4 Chicken Breasts

1 clove of Garlic (minced)

1/2 lemon (juiced)

1 tsp of black pepper

1 TB of Worcestershire Sauce

2 TB of Yacon Syrup

1/2 cup chopped onion (caramelize with sauteed chicken)  (0ptional)

The yacon syrup was easy to mix in this recipe. It was sweet, and thinner than I expected. The syrup is light and is truly as sweet as honey. I enjoyed the flavors of this recipe mixing with the sweetness of the yacon syrup. I sauteed my chicken and added my (room-temperature) yacon syrup while it was cooking and after I plated my dish.

There are so many other recipes I want to try with it and I appreciate the fact that it feels like I’m cheating on my diet even though yacon syrup is healthy. There are less than 3g of Sugar in yacon syrup, which is awesome!

My Weight Loss Journey Update Featuring Surpahs





My weight loss journey has definitely been on an uphill climb this summer. I will say that it hasn’t been easy at all. When you’re so used to eating a certain way and have major influences in your house, like a 2 year old and a husband, eating healthy is not first on your priority list. My main priorities are making sure everyone is fed and full. When you’re dieting, this can be the hardest task yet, but there are a few things that have helped considerably in cutting down bad eating habits.

The first of course, is being able to meal plan. I’ve learned that it has been easier for me to eat better when I have planned out my meals for the week. This has definitely helped me from eating fast food as much because I already have set meals in place for myself, which helps reduce temptation to eat elsewhere. Emeals, is always my go to for meal planning throughout the week because it’s so easy to access and has plenty of options to choose from to make for my family. As I previously blogged about, we did try the Clean Eating Meal Plan, and it wasn’t the right fit for us. We are now using the phone app and are currently on the Classic Meal Plan and we have loved it so far.

I’ve enjoyed being able to eat better and cook meals that my whole family would love and actually eat. I also have gotten a few things that have been making this healthy lifestyle transition a little bit better for me. I cook with mostly fresh vegetables and fruit and always use a cutting board. Well I was lucky enough to try out a Surpahs Bamboo Cutting Board and was pleasantly surprised at the quality. I was really pleased with the sizes of the cutting boards as well. The wood had such a smooth finish and wasn’t hard to work with at all. The bamboo is durable enough to withstand high quality kitchen and butcher knives, as we also love cutting up steak and chicken on our cutting boards. I also noticed that there weren’t any scratches or raises on the cutting boards after usage and the boards didn’t show signs of the wood splitting or worry of splinters. These were main concerns with using a wood cutting board, but the Surpahs Bamboo Cutting Board is really top quality.






Another practice that I started since the start of this summer is weighing myself. I try to only weigh myself, once a week but have definitely considered doing it a lot less. When you focus on the numbers, instead of the progress, it’s hard to stay on track. I usually start with recording my weight and looking up my other weight contributors, such as BMI, my measurements and goal weight. I was so happy that I finally had a sophisticated scale that could actually tell me body weight, water weight, bone density and BMI all in one! How great is that?! The Surpahs Body Fat Scale, can actually do all of that and more. You can add 7 other people on the scales, as it allows you to set profiles up in the scale. It was so easy to set up and use. All you have to do is step on the scale and it will automatically tell you your weight. Once you stand on the scale a little longer, you will also get your other stats and have the option to choose which profile you’re set up on.

My husband and I were so excited to try it out. I also had my mom, brother and sister in law try it out, and they were also surprised at how great this scale is in accuracy. My mom and sister in law are both nurses, so I really wanted to get their opinion as they work in the medical field and the numbers were pretty accurate and they were really impressed. There is a notification within the material of the scale that notes that you should consult your physician concerning your results, especially if you don’t understand them. I couldn’t be happier with the Surpahs Body Fat Scale and I can’t wait to compare my numbers a year from now.

Easy & Delicious Strawberry Jam Recipe





2lbs of Strawberries (Hulled)

4 cups of Sugar

¼ Lemon Juice

Fresh Strawberries

Fresh Strawberries

In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry.

Using a saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved.

Increase heat to high, and bring the mixture to a boil. Boil, stirring often, until the mixture reaches 220  degrees F (105  degrees C).

Transfer to hot sterile jars, leaving 1/4  to 1/2  inch headspace, and seal. Process in a water bath.

If the jam is going to be eaten right away, don’t bother with processing, and just refrigerate.

Sauteed Green Beans



1 pound fresh green beans, trimmed and snapped

2 Tb of Olive Oil

Garlic Salt/Powder to taste

Dried or Minced Onion

Black Pepper to taste

Heat oil in a wok or pan over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season green beans with dry ingredients and minced onion. Cook until tender and done. Optional: Flip green beans when they start browning slightly on one side and continue cooking until brown and tender on both sides. Offers more flavor infused green beans with the onion and the oil.
