Veggie Stir Fry


Quick 10 Minute Veggie Stir Fry


Parsley 2 Tsp.

Salt 1 Tsp.

Ground Black Pepper 1 Tsp.

2 Eggs

Pure Vegetable Oil 1 Tb.

1 Bag of Frozen Vegetable Stir Fry W/ Rice (Includes Mushrooms, Red Peppers, Broccoli, Celery, Onion and Rice

*Soy Sauce 1 Tb.






Heat  pure vegetable oil in a large skillet or wok on medium heat


Add frozen veggie stir fry mix  with rice to the heated pan


Let it cook down before you start adding your seasonings to the stir fry


I added 1 Tb of soy sauce to my veggie stir fry (optional)


I also cooked 2 eggs and added my parsley, pepper and salt and scrambled them in a small skillet


Scramble the eggs in with the veggie stir fry mix 


Add more parsley to garnish and voila!

My Weight Loss Journey & Yacon Syrup Glazed Chicken





I have always been on the search for healthy recipes to try along my weight loss journey and came upon this recipe from Dr. Oz’s website. Grilled, baked, and sauteed chicken breasts is my favorite go to meal when I’m trying to complete a healthy meal. I decided on the Yacon Syrup Glazed Chicken and it turned out so delicious! I changed the recipe to accommodate what I had in my pantry and it tasted great! If you love honey glazed meat, this dish is for you, but first let’s start with some facts on Yacon Syrup.


What is Yacon Syrup?

Yacón syrup is a sweetening agent extracted from the tuberous roots of the yacón plant (Smallanthus sonchifolius) indigenous to the Andes mountains.

What are the health benefits of Yacon Syrup? (Excerpt from Site)

My (version of the) Recipe for Yacon Syrup Glazed Chicken :

4 Chicken Breasts

1 clove of Garlic (minced)

1/2 lemon (juiced)

1 tsp of black pepper

1 TB of Worcestershire Sauce

2 TB of Yacon Syrup

1/2 cup chopped onion (caramelize with sauteed chicken)  (0ptional)

The yacon syrup was easy to mix in this recipe. It was sweet, and thinner than I expected. The syrup is light and is truly as sweet as honey. I enjoyed the flavors of this recipe mixing with the sweetness of the yacon syrup. I sauteed my chicken and added my (room-temperature) yacon syrup while it was cooking and after I plated my dish.

There are so many other recipes I want to try with it and I appreciate the fact that it feels like I’m cheating on my diet even though yacon syrup is healthy. There are less than 3g of Sugar in yacon syrup, which is awesome!

My Weight Loss Journey Update Featuring Surpahs





My weight loss journey has definitely been on an uphill climb this summer. I will say that it hasn’t been easy at all. When you’re so used to eating a certain way and have major influences in your house, like a 2 year old and a husband, eating healthy is not first on your priority list. My main priorities are making sure everyone is fed and full. When you’re dieting, this can be the hardest task yet, but there are a few things that have helped considerably in cutting down bad eating habits.

The first of course, is being able to meal plan. I’ve learned that it has been easier for me to eat better when I have planned out my meals for the week. This has definitely helped me from eating fast food as much because I already have set meals in place for myself, which helps reduce temptation to eat elsewhere. Emeals, is always my go to for meal planning throughout the week because it’s so easy to access and has plenty of options to choose from to make for my family. As I previously blogged about, we did try the Clean Eating Meal Plan, and it wasn’t the right fit for us. We are now using the phone app and are currently on the Classic Meal Plan and we have loved it so far.

I’ve enjoyed being able to eat better and cook meals that my whole family would love and actually eat. I also have gotten a few things that have been making this healthy lifestyle transition a little bit better for me. I cook with mostly fresh vegetables and fruit and always use a cutting board. Well I was lucky enough to try out a Surpahs Bamboo Cutting Board and was pleasantly surprised at the quality. I was really pleased with the sizes of the cutting boards as well. The wood had such a smooth finish and wasn’t hard to work with at all. The bamboo is durable enough to withstand high quality kitchen and butcher knives, as we also love cutting up steak and chicken on our cutting boards. I also noticed that there weren’t any scratches or raises on the cutting boards after usage and the boards didn’t show signs of the wood splitting or worry of splinters. These were main concerns with using a wood cutting board, but the Surpahs Bamboo Cutting Board is really top quality.






Another practice that I started since the start of this summer is weighing myself. I try to only weigh myself, once a week but have definitely considered doing it a lot less. When you focus on the numbers, instead of the progress, it’s hard to stay on track. I usually start with recording my weight and looking up my other weight contributors, such as BMI, my measurements and goal weight. I was so happy that I finally had a sophisticated scale that could actually tell me body weight, water weight, bone density and BMI all in one! How great is that?! The Surpahs Body Fat Scale, can actually do all of that and more. You can add 7 other people on the scales, as it allows you to set profiles up in the scale. It was so easy to set up and use. All you have to do is step on the scale and it will automatically tell you your weight. Once you stand on the scale a little longer, you will also get your other stats and have the option to choose which profile you’re set up on.

My husband and I were so excited to try it out. I also had my mom, brother and sister in law try it out, and they were also surprised at how great this scale is in accuracy. My mom and sister in law are both nurses, so I really wanted to get their opinion as they work in the medical field and the numbers were pretty accurate and they were really impressed. There is a notification within the material of the scale that notes that you should consult your physician concerning your results, especially if you don’t understand them. I couldn’t be happier with the Surpahs Body Fat Scale and I can’t wait to compare my numbers a year from now.

I’m pushing forward with my new health y lifestyle this year and I’m loving it so far. I’ve started to incorporate more fresh fruits and vegetables into my diet. I am currently on the clean eating plan, which is a task in itself, but I’m sticking to it and making revisions to my meal plans from eMeals.

My favorite thing to make is smoothies! I love fruit and I get to enjoy them when I make smoothies. I’ve been making smoothie recipes from this book I like to call the “holy grail of smoothie books”. It’s called “The Big Book of Juices” and I love it! I wrote about this book when I first started my weight loss journey and you can find out more about it here.

I’ve been trying to incorporate more leafy vegetables in my diet as well. I have been using spinach in just about everything I can put it in. I use spinach in my smoothies and also in my meals. I love to cook it with chicken breasts to make a really great dinner dish. Just add a sprinkle of shredded mozzarella on top and you have a healthy dinner.



I’m excited about my new healthy lifestyle. Great health is what I want for this year and I’m happy to be making the changes for myself as well as my family.

My Weight Loss Journey| End of the Year Update 2013


It’s finally the end of the year, and it’s time to evaluate how much I’ve lost since my journey began at the beginning of the year. My goal was to weight 130 by end of this year, but unfortunately I did not meet my goal. I am, however, happy with how much progress I’ve made since the start. I am still at my pre-pregnancy weight of 145-150 lbs. Check out my previous post about the beginning of my weight loss journey here and here.

What has helped me lose 30lbs this year, was consistent exercise, diet, and supplements.

My weight loss journey routine in 2013: 

(*I’m not a dietician or fitness expert. This is just what worked for me)

  • I exercised before eating breakfast, which has proven to help burn more calories in a day than waiting. I exercised for 30-45 minutes 5 days a week.
  • I changed up my exercise regimen on a daily basis, to aide in muscle confusion. I did cardio, high intensity interval training, and dance/zumba.
  • My diet consisted of eating what I wanted but I gave myself a calorie goal of 1200-1300 calories a day.
  • I drank plenty of H20. I drank the 64 oz. of water recommended for daily consumption.
  • I got plenty of rest. At least 6-8 Hours.
  • I consumed multivitamins and other supplements to help increase my vitamin intake and energy.

My weight loss journey goals for 2014:

  • Exercise at least 30-45 minutes, at least 3 times a week. Burning at least 250-500 calories a day.
  • I want to change my diet and start eating clean, which I have found so many resources for this diet plan, so I’m excited to start.
  • Join a gym and/or running club in my community to help with extra motivation.
  • My new weight goal will for 2014, will be 115-130 for March 2014. 115 is my body’s “happy” weight, so I’m hoping to reach this goal next year.

I’m only 4’11, so my new goal weight is a good range for someone with my build and stature. You guys remember Snookie’s awesome weight loss?! No matter how crazy she is, she reached her goal! And in now way am I saying I want to look like her lol ! But her body type is comparable to mine. Short, small frame and bulbous head lol 🙂

I’ve checked my BMI, time and time again, and this is pretty much a good range for my body type, so it just confirmed what I would like my ideal weight to be. I’m going to be using some of my new favorite apps such as My Fitness Pal, Pedometer and Sworkit to help me on my weight loss journey. I’ve also found a fun new app and program By Cassey Ho called Blogilates.  She has a great 12 week program, that I would like to start January 1st. I started this month, but didn’t stay consistent because of finals, so I will be starting up the first of the year. I’m super excited and I’m ready to get started.

Weight Loss Update


I finally have found some time to sit down and write about my life journey and what has been going on for the past few months. A lot has gone on and I don’t know where to begin, but I guess I’ll start where I left off.

I am officially down to my pre-pregnancy weight! Yessss! It only took a solid year but I’m excited about my results. I stuck to a strict diet and exercise schedule and lost the remainder of the weight I needed to lose. I’m so happy that I’m able to fit into things that I wasn’t able to even after I had my baby girl, it feels so great. But, I’m not done. I would like to lose another 30 lbs to get myself in a healthy weight range. My BMI is too high for my height. I’m only 4’11 so my weight goal is 115-120. I’m going to give myself until the end of the year to accomplish this and I want to be able to do it at my own pace. I want to use a combination of different exercise regimen’s and diet changes to accomplish this. I am going to try and post some healthy meals, snacks, and shakes to share with you guys when I start.

New goal date is December 2013 and I’m excited to get started. I’m hoping to post recipes along with some of the healthy choices to share with you guys.
